Seriously Chocolate Zucchini Bread (Dairy-Free)

This is a yummy, moist quick bread. Your picky eater won't realize there are squash in there, and you can smile and offer seconds.

SERVES 16 (change servings and units)

Ingredients

Directions

    Preheat oven to 350 ' F.
  2. 2
    Combine sugar, oil, vanilla and eggs.
  3. 3
    Stir in flour, cocoa, baking soda, baking powder, salt and cinnamon.
  4. 4
    Fold in zucchini, coconut, nuts and chocolate chips.
  5. 5
    Pour into two greased loaf pans or one bundt pan.
  6. 6
    Bake two loaf pans for one hour, or bundt pan for 70 minutes.

    Cool partially in pan, then invert to wire rack to finish cooling.

Thanks, much, for A GREAT CHOCOLATE FIX! I, too, was generous with the cinnamon (love the stuff!) & also with toasted walnuts (a nice rounded measure of 'em)! Very much enjoyed the inclusion of coconut! This recipe is now in several of my cookbooks, including the one for my Holiday Gift Ideas! [Tagged, made & reviewed for one of my adoptees in the current Pick-A-Chef]
