From Mom's cookbook. For Passover and year-round. Use chicken fat (schmaltz) if serving with meat, margarine if serving with dairy.

SERVES 16 (change servings and units)

    Combine eggs, cinnamon, sugar and vanilla in a large bowl. Add apples and raisins.

    Hold each sheet of matzo under running water until it gets soggy and soft. Break into pieces 1-2" square and drop into bowl. Mix gently but thoroughly. Pour into 13x9x2" baking dish. Dot top with margarine or chicken fat.

    Bake in preheated 350°F oven 50-60 minutes. Serve hot or cold.
